If you, or a member of your family, are gluten intolerant, you will know how difficult it is to prepare meals. Many people cannot ingest this protein properly and therefore suffer with digestive problems. Here’s a great 3-course meal for four, comprising of gluten free recipes.
Corn and Chicken Soup. Ingredients: One whole chicken (cut into portions with skin removed), a chopped onion, a peeled and sliced carrot, a chopped celery stalk, 6 black peppercorns, a bay leaf, an 8-ounce can of creamed corn, salt and pepper, and a quart of water.
Put ingredients into a big wok or saucepan and boil on medium heat. Simmer for 30 minutes. Take the chicken out. Put the stock through a strainer and then pour it back into the saucepan. Add the creamed corn. Stir while it comes to the boil, reduce heat and simmer for about 5 minutes. Break the chicken into strips and add to the mixture.
Chili Colorado. Ingredients: two pounds lean beef cut into cubes, 3 tablespoons rice flour, one crushed garlic clove, quarter cup extra virgin olive oil, quarter cup of chili powder (more if you like), 5 cups beef stock, and 1 teaspoon of sea salt. Cover the beef cubes with rice flour. Ensure they are evenly coated.
Heat olive oil on medium heat in a big pan. Add the cubed beef and turn the heat to low. Stir while cooking until the beef cubes are brown and tender. Add the balance of the flour and the garlic and cook for 2 minutes, then add the chili powder.
Pour in the beef stock and add the sea salt. Bring the mixture to the boil on medium heat. Reduce the heat to low and simmer for about 30 minutes until the meat is cooked properly and the sauce has thickened.
Toffee and Cinnamon Apples (serves 4): Half a cup of butter, two tablespoons of white sugar, half a teaspoon of ground cinnamon, four peeled and cored apples (cut into thin wedges), 10 pieces of caramel, four tablespoons of heavy cream, and half a cup of pecan nuts.
Stir the sugar, cinnamon and butter in a large pan until the sugar is dissolved. Cook and stir the apples in a pan for five minutes until they soften and color, then add the caramel. Turn the heat down and stir until the caramel melts. Add the cream and pecan nuts. Simmer and stir for a minute. Allow to cool slightly before serving. There you have it – a three course meal made up of completely gluten free recipes.
